Thai Noodle Lettuce Wraps: Dinner in Under 10 minutes
This is a total crowd pleaser in under 10 minutes to prepare. This delivers plant-based protein, carbohydrates for quick energy, and vitamins, minerals and enzymes that nourish our body.
2largecarrots, gratedbuy pre-grated for time saving
2headsliving butter lettuce(roots attached)
1cupmixed fresh wild mushrooms of choice
1tbspcoconut aminos or tamari sauce
1cupRejoice Spicy Peanut Sauce(grab recipe link in notes below)
2tbspsesame or poppy seeds
2tbspfreshly grated ginger(optional)
Instructions
Put the noodles in a bowl. Boil a kettle of water and pour hot water over top. Let sit for 2-3 minutes until noodles are soft. Drain noodles and place in a bowl.
Put all peanut sauce ingredients into a blender and process till smooth. Pour sauce over the noodles and toss.
Mince mushrooms and toss in a bowl with tamari or coconut aminos.
Cut off the root of the lettuce and the leaves all fall out on a large plate.
Place noodles, grated carrot, mushrooms, seeds, and lettuce leaves on the table.
Everyone fills up the lettuce leaves as they like and dinner is served.
