Healthy, Baked Purple Potato Fries

blue or purple potatoes

coconut or avocado oil

tsp
sea salt

tbsp
nutritional yeast

sprigs
rosemary
Instructions
Preheat oven to 350 degrees and line a baking sheet with parchment paper
Cut the potatoes into long strips and lay them on the baking sheet, side-by-side.
Mix the remaining ingredients into a bowl and drizzle, brush over the potatoes.
Bake in the oven for 30-40 minutes.
Notes
Serve with the homemade ketchup (link above). Potatoes will store in an airtight container in the fridge for 5 days.
