Carrot Cake Energy Balls
Carrot Cake Energy balls are a sweet and satisfying snack anytime.

- 2-3 medium carrots, grated
 - 6 dates, pitted, soaked
 - 1/4 cup cashew or almond butter
 - 1 cup organic rolled oats GF version as needed
 - 1 tsp cinnamon
 - 1 tsp allspice
 - 1" piece fresh ginger, peeled
 - 1/8 tsp sea salt
 
 
Soak the dates in warm water. If you are in a hurry 15 minutes will work, if you have more time, I like to soak them for 1-2 hours. Remove pits, drain the water, and place them in a blender or food processor.
Grate the carrots and set them aside.
 Add the remaining ingredients (except grated carrots) and process for about 2 minutes until everything is well blended.
 Add the carrot and mix until everything is well combined. Take about 1 tbsp of the mixture and roll it in your hands into a ball.
 You can freeze them like this or roll them in whatever you like.
 
They keep well in the fridge for one week or in the freezer for two months.
