So you have come home from work and have like 30 minutes to feed everyone, get ready, and head out the door to be somewhere. Yes.. you could hit a drive through and everyone eats burgers in the car while you drive like a crazy person or…. you could give this recipe a try.

I have made this recipe more times than I can count. I walk in the door, dump noodles in a bowl, put the kettle on.. and go start getting ready. Come back pour water on the noodles and let them sit while I help the kids ready. Then all the sauce ingredients go into a blender, while my kids take on the job of getting out the veggies we need. Within 10 minutes time, we are sitting and eating these wraps before we have to leave. Any leftovers? No problem, these make a great lunchbox idea for the week ahead.

For me, a working mom, these are the real recipes. The simple foods that everyone will eat and I can feel good about serving them. This is also a cheaper than what that burger drive-through would have cost you, not to mention your health thanks you for making this plant-based, nutrient dense choice.

Thai Noodle Lettuce Wraps: Dinner in Under 10 minutes

This is a total crowd pleaser in under 10 minutes to prepare. This delivers plant-based protein, carbohydrates for quick energy, and vitamins, minerals and enzymes that nourish our body.

Ingredients
  

  • 1/2 package whole wheat rice noodles
  • 2 large carrots, grated buy pre-grated for time saving
  • 2 heads living butter lettuce (roots attached)
  • 1 cup mixed fresh wild mushrooms of choice
  • 1 tbsp coconut aminos or tamari sauce
  • 1 cup Rejoice Spicy Peanut Sauce (grab recipe link in notes below)
  • 2 tbsp sesame or poppy seeds
  • 2 tbsp freshly grated ginger (optional)

Instructions
 

  • Put the noodles in a bowl. Boil a kettle of water and pour hot water over top. Let sit for 2-3 minutes until noodles are soft. Drain noodles and place in a bowl.
  • Put all peanut sauce ingredients into a blender and process till smooth. Pour sauce over the noodles and toss.
  • Mince mushrooms and toss in a bowl with tamari or coconut aminos.
  • Cut off the root of the lettuce and the leaves all fall out on a large plate.
  • Place noodles, grated carrot, mushrooms, seeds, and lettuce leaves on the table.
  • Everyone fills up the lettuce leaves as they like and dinner is served.
