I was walking through the grocery store the other morning and I could smell freshly baked cookies. I followed the smell and watched the bakers placing out big, soft and delicious oatmeal cookies in the display case. I, of course, enjoyed one while I did my grocery shopping feeling like I totally deserved this yummy treat for the busy work week I finished. Of course, I then thought… why can’t I start my day with an oatmeal cookie? How can I healthify this cookie into a delicious breakfast meal to will energize me and make even the coldest winter mornings seem warm and happy. Enter my Oatmeal Cookie Smoothie bowl!
I am super excited about this recipe because I have been looking to branch out of my typical breakfast routine and this bowl is the perfect solution. It’s like I took my overnight oats and morning smoothies and married them together with the flavors of that warm oatmeal cookie I enjoyed while shopping. Shake up your morning routine and enjoy this breakfast under 400 calories and with 14 grams of plant-based proteins. Oatmeal Cookie Smoothie Bowl
Ingredients
- 1 cups cashew milk
- 1/3 cup organic rolled oats choose gluten-free as needed
- 1/2 frozen, peeled banana
- 2 tbsp cashew or almond butter
- 1 tbsp dark maple syrup
- 1/2 tsp cinnamon
- 1/4 tsp vanilla powder liquid vanilla works fine too
- 1 tbsp hemp hearts or chia seeds
- 1/4 cup ice cubes
- 1 tbsp raisins optional topping
- 1 tbsp raw cacao nibs optional topping
- 1 tbsp rolled oats optional topping
Instructions
- Place everything, except the optional toppings into a high-speed blender and process until it's smooth.
- Pour into a bowl and top with optional toppings and enjoy.
