When I was a little girl my parents would take my brother and me to Jasper National Park every year. My mother loved the mountains. She would turn on classical music as we drove into the park while encouraging us kids to look up and take in the scenery. At the time we would roll our eyes, wanting to be left alone with our earphones. Today, I find myself turning around and harassing my kids to look up and enjoy the beauty of the mountains.


A ritual on our annual mountain vacations was to visit a small ice cream parlor in town,  the store had an arcade in the back (yah— very old-school!). Looking back, I don’t think the ice cream was really anything special but, as I kid, I thought it was the greatest in the world.

Each time we visited, I would order the same flavor: Mint Chocolate Chip, my all time favorite ice cream. Whenever I taste this flavor combination, I am brought back to a time that was less complicated, fun and full of possibilities. I wanted to create something that would not only nourish me, but provide the kind of energy you have as a child, and also bring back that positive memory. Mint Chocolate Chip Smoothie Bowl

Taking an old ice cream classic flavour and adding a healthy spin. If you love mint and chocolate you will love this smoothie!

Servings 2 people

Ingredients
  

  • 1 cup almond milk
  • 1 cup fresh spinach
  • 1 scoop of your favourite greens powder
  • 2 tbsp hemp hearts
  • 1 tsp vanilla
  • 1 handful fresh mint leaves
  • 1.5 cups ice
  • 1-2 tbsp raw cacao nibs

Instructions
 

  • Place all ingredients except the cacao nibs into a blender and process until smooth
  • You can add more ice or pre-freeze the banana if you want this smoothie bowl to be a thicker consistency.
  • Top with raw cacao nibs and serve!
