Sometimes the simplest ingredients can bring us the most comfort. When we want fries, this is my go-to recipe. It is quick, easy, and uses basic ingredients that enhance the nutrition of this perfect vegetable side dish. Blue or purple potatoes add color, phytonutrients, and interest to any plate.
If you are unfamiliar with nutritional yeast, it is a great way to get that parmesan cheese flavor while keeping the fat content low. Nutritional yeast also is very high in vitamin B’s and iron which enhances the nutritional value of the food.
I like to make a big sheet of these potatoes on the weekend, by meal prepping I have fries for dinner that night and potatoes to add to salads or protein bowls throughout the week. Healthy, Baked Purple Potato Fries
Ingredients
- 2 lbs blue or purple potatoes
- 2 tbsp coconut or avocado oil
- 1/2 tsp sea salt
- 1-2 tbsp nutritional yeast
- 2-3 sprigs rosemary
Instructions
- Preheat oven to 350 degrees and line a baking sheet with parchment paper
- Cut the potatoes into long strips and lay them on the baking sheet, side-by-side.
- Mix the remaining ingredients into a bowl and drizzle, brush over the potatoes.
- Bake in the oven for 30-40 minutes.
