My love for avocados is pretty clear through my recipe page. The avocado was once feared during the anti-fat diet craze of the 80’s & 90’s. Luckily, we got a little wiser and know that our nervous system, cardiovascular system, and brain needs healthy fats to function. 2/3 of the fat in avocados are heart-healthy monosaturated fats, like those found in olive oil. Avocado also contains phytosterols and poly hydroxylated fatty alcohols, both which have anti-inflammatory benefits. Avocado is low sugar and low carb while delivering 10grams of dietary fiber in one cup which aids blood sugar regulation. They also are creamy, delicious, and a star of these creamsicles.
Fresh lime juice and avocado are like culinary BFF’s in my books. Not only will it keep the avocado fresh tasting and avoid it turning brown but it adds a pop of freshness and citrus that makes these pops perfectly to cool you down in the summer. Coconut water is a great natural electrolyte which is perfect to hydrate you and keeps you cool on those hot summer days.
I love the classic popsicle molds! My favorite… its a little more pricey but it will last you forever and has reusable bamboo popsicle sticks is the Onyx paddle molds. You can use any molds and if you don’t have molds that’s ok too, just fill paper cups and insert popsicle sticks in and they work just as good.
Avocado, Coconut & Lime Popsicles
Ingredients
- 1 large ripe avocado, peeled and pitted
- 2 limes, juice & zest
- 2 cups natural coconut water (careful of added sugars)
- pinch fine sea salt
- 1 tbsp honey or agave
Instructions
- Place everything into a high-speed blender and process till smooth.
- Pour evenly into molds, freeze for 4 hours and enjoy.
