Do you feel like you never have time for breakfast? You are busy rushing around and getting ready for the day that your only chance for breakfast is hitting a drive-thru for a sugary latte and pastry? If so, you are not alone! 51 Million people in North America skip breakfast and those that do eat breakfast, research shows they typically consume our entire days worth of sugar unknowingly in prepackage breakfast foods.
The side effects of this habit are that our blood sugars either drop very low because we skipped breakfast or spike through the roof because of our breakfast choice. This leaves you feeling jittery, anxious, craving other sugary foods post the inevitable crash, and slowly gaining a few pounds each year as we age. The solution we know is to simply have breakfast that delivers protein, fiber, and carbohydrates to boost energy, balance blood sugar and control food cravings for the rest of the day. The challenge is finding time to get breakfast into you!
This is where I find breakfasts you can prepare on Sunday for the work week ahead sets you and your family up for success because then breakfast is a grab-n-go meal when it needs to be but you are getting better nutrition than a muffin and latte in the morning. Also, it saves you money from overpriced drive-thru snacks. So its a win-win for your health and your pocketbook.
What I love about homemade yogurt breakfast jars is you are able to control the sugar by choosing the choice of toppings that suit your needs. Granola, nuts and seeds, natural fruit all can help flavor your yogurt without added sugars in the commercial yogurts. Homemade Probiotic Yogurt is an excellent way of making a gut-loving yogurt right at home without a pricey yogurt machine. It also provides healthy fats, antimicrobial benefits, and plant-based proteins that will maintain your energy throughout the morning. Adding Acai provides an excellent source of antioxidants which strengthens our immune system and helps combat free radical damage. It also is a good source of fiber which helps you feel fuller, promotes bowel health and aid elimination of toxins. Acai also offers heart-healthy fats that help memory, energy, and maintain a healthy weight.
I love mason jars which can probably be seen from the recipes I post but I find them an affordable and durable container for layering breakfast jars to store in the fridge. I fill the bottom jars with the yogurt mixture, add fresh or frozen fruit, and then top with my dry proteins such as nuts, seeds, hemp hearts, or chia seeds. Simply secure the jar and pop them in the fridge for your busy morning. For those that need to be more mindful of blood-sugar balance, I like to select Low Glycemic Index Foods such as banana’s, pears, or apples to reduce the impact on testing of your blood sugar.
I hope you find this recipe to be a simple solution to establishing a healthy breakfast morning routine. If you are in a pinch you can skip making the coconut yogurt and pick a good quality, organic, plain greek yogurt for these jars too.

Probiotic Coconut Yogurt Acai Breakfast Jars
Ingredients
- 2.5 cups probiotic coconut yogurt recipe link in post & recipe notes section below
- 1 package frozen acai
- 1.25 cups mixed fruit of choice
- 5 tbsp nuts, seeds, hemp seeds, or chia seeds
Instructions
- Thaw your acai package by placing it in a cup of water. Pour the acai liquid into the yogurt and gently stir with a wooden spoon until well combined.
- Scoop 1/2 cup of yogrurt into 5 jars. Top with 1/4 cup of fruit of choice and 1 tbsp of nuts/seeds/ hemp hearts.
- Securly place the lid on the jars and store in fridge for 5 days.
