Beautifying Antioxidant Overnight Oats

Blueberries, pomegranate seeds, lemon zest, coconut, chia and cinnamon make these overnight oats a powerhouse for your immune system, digestion and skin. They are fresh, simple and can be made a head!

Servings 4 cups

Ingredients
  

  • 3 cups almond milk (nut milk of choice)
  • 2 cups quick rolled oats (Gluten-free as needed)
  • 1/4 cups shredded coconut
  • 1/2 cup wild frozen blueberries
  • 1/4 cup pomegranate seeds
  • 1 lemon Zest of 1 lemon
  • 1/4 cup chia seeds
  • 1 tsp vanilla bean powder
  • 1 tsp cinnamon
  • 1 tbsp. hemp hearts or peptide seeds (optional garnish)

Instructions
 

  • Add all ingredients except blueberries and milk a large bowl and stir well.
  • Place the frozen blueberries in a food processor and blend until it’s broken down (about a 1 minute)
  • Add the blender blueberries and milk to the bowl and mix until well combined.
  • Scoop the oat mixture into jars; top with extra berries, hemp hearts or peptide seeds then secure lid and place in fridge.

Notes

This makes enough for 4 cups of oats and lasts 3-5 days in the fridge.
