So…. ya.. Breakfast Pizza kinda happened and I am hooked. I was making a big batch of Matcha Pancakes, for breakfast one morning and I made too much. I decided to use the rest of the batter up, I poured it into the pan and the mixture quickly all came together making one big pancake. We had made Coconut Whip Cream that day before and I had some leftover I needed to use up… from there between the kids and I we just had fun and got creative.
I have to say some of my favorite recipes start like this, not the one’s I spend a great deal of time creating, but instead the one’s that organically happen in the kitchen based purely on what was on hand. This recipe is a reminder to not always feel like you have to follow the recipe exactly but to put your personality into it. This makes the recipe yours and something that you love making.
In selecting the toppings of this pizza there is literally not a right or wrong way of doing this. Below I listed what I used, again this was what was in my fridge and pantry that day. Use up what you have, but also use this as a great way to try out a superfood you might have heard of but have not had the chance to try. Chia seeds, hemp hearts, pumpkin seeds, sunflower seeds, raisins, fresh fruit, dried fruit, chocolate, nut butter drizzle, bee pollen, goji berries, cinnamon, maple syrup, chocolate, or yogurt.. the list goes on of all the things you could try to enhance the nutritional value and flavor of this fun breakfast treat. Energizing Breakfast Pizza
Ingredients
- 2 cups pancake batter use your favorie kind or my matcha recipe in the link above
- 1/2 tbsp coconut oil
- 1/2 cup coconut whip cream recipe int he link above
- 1 kiwi, sliced
- 1 tbsp chia seeds
- 1 tbsp hemp hearts
- 1 tbsp goji berries
- 1 tbsp raw cacao nibs
- 1 tbsp coconut flakes, unsweetened
- 1/2 large banana, sliced
Instructions
- Melt oil in a pan over medium heat. Pour in the pancake mix and cook on each side until golden brown. You will need a big spatula and be careful it does not break.
- Place the pancake on a big plate and allow to cool slightly. Top with the coconut whip cream (nut butter is great too), then sprinle with toppings and serve.
