Burgers? Yes Please. Coffee? Always. Have you ever enjoyed a coffee rubbed burger? If not, you are in for a real treat. When I was in Hawaii, we hit up a burger place that had Kona Coffee rubbed burgers. It was amazing. The type of coffee you select can give the meat a distinctive aromatic taste and add acidity, bold aroma, bitterness, and sweetness to the meat. A dark nutty roast or a sweet espresso powder can completely change the taste of the meat. I like to pair the coffee rub with Bison. I find Buffalo has a lighter flavour, tastes slightly sweet and is deliciously tender. Buffalo meat is naturally lower in fat, calories and cholesterol than traditional beef. Plus, unlike conventionally raised beef, bison are typically grass-fed. Shake things up next time on the grill and try these burger patties.

Coffee-Rubbed Jalapeno Bison Burgers

Not your average burger! Tender and Juicy jalapeño bison burgers seasoned with a bold coffee rub. Time to take your burgers to the next level.

Ingredients
  

  • 1 tsp coconut oil
  • 1 medium red onion
  • 1 medium jalapeno pepper seeded & minced
  • 2 lbs lean ground bison any ground meat is great
  • 1 tsp cumin
  • 1 tsp garlic powder
  • pinch salt and pepper to taste
  • 4 tsp coffee grounds

Instructions
 

  • Preheat grill or griddle to medium-high heat. Line a baking sheet with parchment.
  • In a small pan over medium heat, melt coconut oil and sauce onion and jalapeño for 4-5 minutes till browned. Remove from heat.
  • In a large bowl, mix ground bison, onion mixture, cumin, garlic powder, and salt and pepper to taste. Form into 8 burger patties (about 1/4 lb each) on lay on baking sheet.
  • Sprinkle 1/4 teaspoon of coffee grounds onto the top of each patty and press into patty withe the back of a spoon. Flip burger and repeat on the other side.
  • Place burgers on heated grill and cook 4-5 minutes per side, or more for desired doneness.
  • Serve on seedy buns with sliced red onions, avocado and cheese, or wrap in lettuce wraps for a grain-free version.

Notes

cooked patties will keep in an air-tight glass container for 3-5 days.
