recently had a client who was allergic to gluten and nuts, plus she was a diabetic and wanted to stay away from any added sugars. When we were creating recipes together, I asked her what was the one food she most missed with her recently diagnosed food restrictions? “Yogurt with Granola,” she said. What I found was that granola was also something terribly missed by mom’s that wanted to send granola and yogurt to school but they could not due to nut-allergies in the school, and then my Keto clients… well they could not find granola to eat due to the gluten and sugars in most of them. So this sent me on a mission!
Now, as the weather is getting nicer and patio season is upon us my clients want to know “What can I drink on Keto?”. The reality of going camping, enjoying your lake vacation, or hanging out with friends and not having an ice-cold drink can feel a lot like “diet restrictions”. What we know about restricting ourselves and saying “oh I can’t enjoy that I am on a diet”… is it’s very damaging emotionally, can make you feel defeated if you do not follow strict guidelines, and can increase binge eating. By taking a balanced approach we want to live our lives while aligning with our health goals in a seamless way. Now, I am most definitely not saying that alcohol is apart of a healthy diet, but what I am saying, is that for those that want to not feel restricted, not stress about what to drink at the BBQ while aligning with your low-sugar and/or low-carb lifestyle then there are ways to do both.
Beautiful Banana Splits. Chocolate Drizzle on a mountain of whipped cream. Dipping fresh fruit into warm chocolate sauce. A decorative topping to your cakes and pastries. These are a few ways I like to use a chocolate sauce to elevate your dessert when you are wanting to serve something special or just because you want to indulge a little. It is amazing how excited everyone gets when you add a bowl of warm chocolate sauce with a platter of fresh strawberries at your patio party than simply serving the strawberries alone. It takes it from a plate of fruit to a fun and delicious dessert.
So I finally caved and bought an Instapot. Now my hesitation has been the high pressure and high heat we know from food science destroys delicate minerals, enzymes, and vitamins. So I was really hesitant to purchase one since I felt my slow-cooker was able to produce the same convenience but gave me control over the slower temperatures to keep my nutritional value higher. However, more and more nutritional clients kept asking me for Instapot recipes, so I figured I better break down and buy one to meet the needs of my clients and learn more about it.

Now, I have many my fair share of plant-based cheeses that make claims that have not really lived up. Watering cheese-like bowls that when you dip your chip into it has no substance, but by using Cauliflower you get the rich and creamy consistency of a nacho dip with a healthier spin on ait.
