Cauliflower was once the forgotten vegetable, considered to be nutrient deficient due to its white color. How iceberg lettuce got a bad rap for being less nutritious than it’s darker green lettuce friends, the cauliflower had the same reputation against its other cruciferous family members.
Cabbage soup is something that is associated with St. Patricks Day or the crazy “cabbage soup diet” of the 80’s. However, cabbage soup is one of my favorite soups because cabbage is wonderful for gut health and is a hearty soup without being heavy. Cabbage has a long history of being used as both food and medicine.
What I love about this soup versus traditional bisques is you still get the satisfaction of a creamy, rich soup without the angry tummy that many people get afterwards. From indigestion to acid reflux to ulcers and chrons disease, the number of digestive related doctor visits annually is on the rise and is quickly becoming what family medical practitioners hear the most of in a day.
As the temperature cools down I find I crave fewer salads and fruits and move towards wanting warming stews, pasta, and nourishing soups.
