So…. ya.. Breakfast Pizza kinda happened and I am hooked. I was making a big batch of Matcha Pancakes, for breakfast one morning and I made too much. I decided to use the rest of the batter up, I poured it into the pan and the mixture quickly all came together making one big pancake. We had made Coconut Whip Cream that day before and I had some leftover I needed to use up… from there between the kids and I we just had fun and got creative.
Why does food on a stick always taste better? haha. There is something playful, something that reminds us of our childhood, that makes eating the food of a stick emotionally pleasurable. Of course, I like to look for ways to introduce healthy snacking so that we can indulge in foods that serve us back nutritionally and emotionally.
I really enjoyed frozen desserts, its very satisfying, and curbs the cravings for something sweet. Using frozen fruit, herbs, and a little natural sweetener creates the perfect frozen treat in your blender in minutes without the heavy fats, and hard to digest casein proteins that can often accompany a dairy dessert.
I’ve received a number of questions from other mom’s asking for tips about helping their kids make healthier choices? Over the years I have had my own struggles as a mom. There are good days and bad days. Learning the balance between educating your kids versus pushing them so far the other direction has taken me years to figure out and being able to admit when I have made mistakes.
Persimmons are out seasonally right now, I keep seeing they’re beautiful brightly colored orange and yellow skins while I am shopping. They seem like such a cheerful fruit I wanted to create something that was fun to eat with them. Nice Cream it is!
