Candy Corn, a candy most often associated with Halloween with its brightly colored orange, yellow and white stripes. Halloween can be a challenging time for parents to navigate the amount of treats and sugary snacks coming at your kids from every direction. From schools to Halloween parties to trick-or-treating itself it seems like for a few days around Halloween it’s hard to escape.
To avoid being the wicked witch at Halloween that denies my kids to join in the fun, I am always looking for ways to teach them that we can celebrate a healthy Halloween and find balance versus excess. This candy cane inspired fruit salad is a fun treat I made to send my kids to school so that they can pull out a cool, Halloween snack at lunchtime that delivers a sweet treat but in the form of natural sugars for energy, the body can use.
This Candy Corn Fruit Parfait also has some added digestive benefits to help support the digestive track at this time of year. I am under no illusion that my kids are not going to get their hands on refined sugars, therefore, I selected pineapple and papaya not only for their colors but for their digestive benefits. Many digestive supplements you buy at the store are derived from the natural enzymes within these fruits. In pineapples, that enzyme is called Bromelain and Papain is the enzyme in pineapples, which can support digestion. Both Papaya and Pineapple offer antioxidant protection from its many nutrients such as Vitamin C, Vitamin A, fiber, and manganese, which can help protect against free-radical damage from an antioxidant enzyme called superoxide dismutase.
The whipped “cream” is made from coconut milk that delivers healthy fats, Vitamin B’s, and anti-microbial benefits as well which are great since I can only image the things my kids may sneak into their mouths when I’m not around. Check out my whip cream recipe.
Candy Corn Inspired Parfait
Ingredients
- 2 cups pineapple cut into bite sized pieces
- 1 cup papaya chopped into bite size pieces
- 1/2 cup coconut whip cream
Instructions
- Place 1 cup of pineapple in the bottom of a jar, top with ½ cup of papaya, then top with ¼ cup of coconut whip cream and enjoy!
