Some of us are morning people that jump out of bed and are ready to take on whatever the day has in store for us, while others, maybe need a little more motivation to get out of bed. Whichever type of morning person you are a beautiful breakfast can fuel you and also mentally get you ready to take on the day. Beets are not often classified as a superfood but they absolutely should be. Their gorgeous red-violet pigment comes from phytonutrients known as Betacyanins. Betalains are known to have powerful antioxidant and anti-inflammatory molecules. Beets are also heart-healthy thanks to being rich in folate and vitamin B’s, which also support cellular metabolism. Beets are a good source of fiber and 1 cup of cooked beets has only 75 calories.
Whole beets can be used to make this pudding in a cost-effective way for the week ahead. However, for my friends that want to spend less time in the kitchen a meal-prep hack for this pretty pink breakfast bowl is to use Beetroot powder. Thinly sliced beets are dried in a dehydrator and ground into a powder for a convenient way of incorporating the benefits of beets into sauces, smoothies, or sweet treats. Berry & Beet Overnight Oats (gluten-free, keto, & vegan options)
Ingredients
Beet & Berry Oats
- 1 cup frozen blackberries
- 1 tbsp beet root powder you can use 1/4 cup cooked & peeled beets too!
- 2 cups coconut milk
- 1/2 cup greek yogurt use coconut for a vegan version
- 1.5 cups rolled oats use gluten-free oats or hemp seeds for keto as needed
- 1 tbsp sweetener of choice stevia, honey, maple syrup
- 1 tsp vanilla
- 3 tbsp white chia seeds
Optional Toppings to garnish
- 1 tbsp coconut flakes, unsweetened
- 1 oz 70% dark chocolate use Lilly's or Krisda brands for a sugar-free chocolate
- 1/2 small banana, sliced
- 4-5 additional berries for garnish
- 1 tsp chia seeds, garnish
Instructions
- Place blackberries, beets or beet powder, milk, yogurt, and vanilla in a blender and process until smooth.
- Place oats and chia seeds in a medium mixing bowl. Add the blender smoothie to the oats and mix well.
- Pour the prepared oat mixture into 4 jars with sealed lids. Top with any optional toppings you like or leave it plain. Pop the overnight in the refrigerator.
